Authentic Party Jollof Rice

Ingredients

  • 3 cups long-grain parboiled rice
  • 1 pack (500ml) Ntoswura Jollof Mix
  • 2½ cups chicken stock or water
  • 2 tbsp vegetable oil
  • 1 large onion, thinly sliced
  • Optional: 1 tbsp butter for extra gloss
  • Salt to taste

Preparation Method

Wash the rice thoroughly under running water until the water is clear, then drain completely.

In a large pot, heat oil over medium heat. Sauté the sliced onions until translucent and fragrant.

Stir in the Ntoswura Jollof Mix and cook for 5-8 minutes, allowing the base to fry slightly and deepen in colour.

Pour in the chicken stock or water and bring to a rolling boil.

Add the washed rice and salt to taste. Stir well to ensure the rice is evenly coated with the sauce.

Cover the pot tightly with aluminum foil or parchment paper before putting on the lid to trap the steam. This is the secret to perfect texture.

Reduce the heat to the lowest possible setting and simmer for 40-45 minutes. Stir gently every 15 minutes to prevent burning at the bottom.

Once the rice is tender, stir in a tablespoon of butter (optional), fluff with a fork, and let it rest for 5-10 minutes before serving.
