Ghanaian Style Fried Rice

Ingredients
- 3 cups chilled, day-old cooked jasmine rice
- 1 cup mixed vegetables (carrots, peas, green beans)
- 1 medium onion, finely diced
- 2 cloves garlic and 1-inch piece ginger, minced
- 2 eggs, beaten
- 3 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tsp curry powder
- Spring onions for garnish
Preparation Method
Heat 1 tbsp of oil in a large pan or wok. Scramble the eggs quickly, then remove and set aside.
Add the remaining oil to the pan. Sauté the onions, garlic, and ginger until fragrant.
Add the mixed vegetables and curry powder. Stir-fry for 3-4 minutes until slightly softened.
Add the chilled rice to the pan, breaking up any clumps with a spoon.
Pour the soy sauce over the rice and toss everything together on high heat for 5 minutes.
Stir back in the scrambled eggs and toss for another minute.
Garnish with freshly chopped spring onions and serve hot with fried chicken or fish.
