Authentic Sunday Jollof

Ingredients
- 2 cups jasmine or long-grain rice
- Ntoswura Jollof Mix
- 2 tablespoons tomato purée
- 1 medium onion
- sliced
- 2 tablespoons cooking oil
- 2 cups chicken or vegetable stock
- 1 bay leaf
- Salt to taste
- Cooked chicken
- optional
- Fresh vegetables for garnish
- optional
Preparation Method
Heat the cooking oil in a large pot over medium heat.
Add the sliced onion and sauté until soft and fragrant.
Stir in the tomato purée and cook for 2 to 3 minutes.
Add the Ntoswura Jollof Mix and stir well to combine.
Pour in the stock
add the bay leaf and bring the sauce to a gentle simmer.
Rinse the rice thoroughly
then add it to the pot and stir to combine.
Cover tightly and cook on low heat
stirring occasionally
until the rice is tender and has absorbed the sauce.
Add a little water or stock if needed while the rice cooks.
Taste and adjust the seasoning with salt if required.
Allow the jollof to rest covered for 5 to 10 minutes before serving.
Fluff gently with a fork and serve hot with chicken
salad or your favourite side.
